Ingredients you need

When making a delicious sugar-free chocolate recipe, you’ll need to make sure you have the right ingredients.

Sweeteners – choose your favorite sugar alternative that doesn’t raise your blood sugar. The most popular sugar-free sweeteners are granulated sweetener (such as granulated erythritol) for chocolate bars, cakes, and cookies, a powdered sweetener (such as powdered erythritol) for smooth homemade chocolate, monk fruit sweetener, and liquid stevia.

There are other sweeteners such as certain sugar alcohols that can replace refined sugar, but these can have side effects of gas, bloating, and diarrhea.

Sugar-free chocolate chips – always read the nutrition label to ensure the sugar-free chocolate chips you buy do not contain maltitol because it will raise your blood sugar (and give bloating and gas).

Sugar-free chocolate chips are perfect for drizzling over desserts, ice cream, and cakes with melted chocolate. A cheaper alternative is to buy dark chocolate with the least amount of sugar you can find.

Vanilla extract – check the vanilla extract (vanilla essence) for any added sugars or sugar alcohols.

Cocoa powder – always buy unsweetened cocoa powder (cacao powder) for your low-carb recipes. Good chocolate recipes taste so much better with a good quality cocoa powder.

Cocoa butter – to make your own homemade chocolate you need cocoa butter (cacao butter) to make your chocolate melt in the mouth delicious.

Coconut oil – to make a sugar-free chocolate recipe dairy-free, you often need coconut oil instead of cream or butter.

How much sweetener to use?

How much sugar do you add to your tea or coffee? How much extra sugar do you add to cakes and cookies?

If you have a sweet tooth, you may need to add more sweetener than a recipe suggests. If you are really addicted to chocolate then you may require double the amount of sweetener compared to a person who has been on a low-carb diet or keto diet for months.

TOP TIP: As with ALL sugar-free recipes, ALWAYS taste your recipes BEFORE cooking to ensure you have added enough sweetener to suit YOUR tastebuds. Read the Ultimate Guide To Low-Carb Sweeteners.

  1. Hi Libby
I have a concern about using sweeteners in recipe’s, watched a video by an Holistic Doctor who say’s it’s possible for Sweeteners like Erythritol (which is my favorite) to potentially raise blood glucose in some people as they can “trick” the brain which thinks it is really sugar.
I guess the only way to test this is by taking a BG reading after ingesting the sweetener…have you any knowledge of this in your experience.
    Thanks Sandy

    1. Hi Sandy, some claim that sweeteners “may” raise your blood sugar, but there is zero research that shows this to be true. However, there are some anecdotal reports in some of my T1 diabetic groups that some sweeteners do raise their blood sugars BUT they also mention that the sweetener was used in a recipe with multiple ingredients so it may not have been the fault of the sweetener itself. It could have been from the almond flour, cream cheese, vanilla extract, or even cocoa powder. Other ingredients such as psyllium husk may have had added sugars if you buy the medicinal brand, not the baking brand. So yes, you are right, the only way to tell is to invest in a blood glucose meter to see exactly how you react. A blood glucose meter is the best $30 you will ever spend.
