Making soup has to be the easiest way to get loads of vegetables into your children. Broccoli and cauliflower are from the cruciferous family (so is kale, cabbage and brussel sprouts) which are full of sulphur containing compounds and glucosinolates, which might help lower your risk of cancer.
They are full of antioxidants, vitaminCc, fibre, vitamin K, calcium, iron, magnesium, phosphorus, zinc, folate, vitamin A. They are pretty much a one stop shop for vitamins, minerals and fibre. And for only 5g carbs per bowl, this is an absolutely fabulous meal.

Heat the butter in a large saucepan and fry the bacon and garlic until just cooked.

Add the broccoli and cauliflower that has been cut into small pieces. Stir to allow the flavours to combine.

Add enough water to cover half the saucepan. Simmer for 10 minutes covered, stirring occasionally.

Blend to a smooth consistency with a stick blender. The smoother, the better for the children.

If you like a creamier flavour, you can add some double creme now.

Lovely soup … used 500 grams frozen broccoli, 500 grams frozen cauli and a cup (250 ml) reduced salt chicen stock with all other ingredients. Cooked on low on stovetop until veges and bacon softened and then blitzed … 6 net carbs total per serve. I got 5 250 ml serves for 5 working days. Will add 2 boiled eggs for a low carb lunch. I love your website and the recipes. I just have a problem when ingredients are listed in grams. I have a hard time converting them. Like 50 g of butter.

50 grams is almost close to 1/4 cup. Try looking for a gram convertor

I calculated it to be 5g carbs per bowl. If you add more cream cheese on top then it is a bit more. So glad to know you’re enjoying my recipes. x
