Finding any new way to serve greens in our house is a fun way to encourage the children to amp up their veggies. We all love haloumi (the squeaky cheese) and so we came up with this little quick recipe. Drizzle with some olive oil just before serving.

Green Beans, Haloumi and Basil Warm Salad
- Wash and trim the ends from green beans. Lightly boil or steam then until just cooked.
- While cooking, cut the haloumi cheese into slices and fry on both sides to brown and become crisp.
- Mix the cooked green beans with torn basil leaves, and drizzle with olive oil then season with pepper. No salt is required as haloumi is a very salty cheese.
