    How To Make Keto Samosa (Air Fryer, Fried or Oven)

    These keto samosas are a low-carb Indian recipe that is a must-try. With only 3.7g net carbs per samosa, we cut out a few steps to make this samosa recipe easy for beginners.

    These golden brown samosas can be made with the air fryer, frying pan, skillet, baked, deep-fried, or oven.

    A keto-friendly recipe for a delicious spicy keto samosa, without fat head dough or mozzarella cheese.

    What is a samosa?

    Samosa is an Indian pastry that is shaped like a triangle and deep-fried. Samosas can be filled with meat or vegetables, but traditionally they are filled with Aloo which is a potato filling.

    The wrapper for these keto samosas is made using my keto roti dough on this site. Samosas make an excellent appetizer, snack, or can even be served as a meal. Pair your samosas with my keto butter chicken and keto garlic naan bread for an Indian-inspired keto dinner.

    Ingredients

    I'll be honest: this keto samosa recipe uses more ingredients than I usually use in my recipes. However, I did my best to simplify the ingredients list without sacrificing any flavor.

    You can also switch out dried and fresh ingredients where needed, especially if one ingredient is readily available. For example, I originally intended to use fresh ginger for this recipe, but it was out at the market so I went with ground ginger instead.

    This version will use coconut flour rather than almond flour. Plus, the low-carb samosa dough happens to be naturally gluten-free as well as grain-free.

    Samosa wrapper:

    • coconut flour
    • psyllium husk
    • cream cheese
    • butter
    • baking powder (optional, omit for a crispier wrapper)
    • hot water
    • salt

    Keto aloo filling

    • steamed cauliflower
    • olive oil
    • ground cumin
    • Garam masala
    • ginger
    • salt
    • diced green pepper (optional for spice, I used a jalapeno)
    • minced garlic
    • lemon juice
    • spring onions/green onions
    • cilantro/coriander

    See the keto samosa recipe card below for quantities. You can adjust seasoning and spices that suit your preference for curries that are mild or spicy.

    Instructions

    Start by maxing up a batch of keto Roti dough. While the dough is resting in a medium mixing bowl, you will want to make the filling.

    To make the filling, heat the oil in a large skillet on medium heat. When the oil is hot add the seasoning (ground cumin seeds, ginger, Garam masala), garlic, and jalapeno to the skillet. Saute for about 1 minute.

    Heat all the spices until fragrant.

    Then add the steamed cauliflower, spring onions, coriander, and lemon juice to the skillet. Stir until the filling is completely mixed then let it cook for 3-4 minutes, stirring occasionally.

    Remove the filling from the heat at let it cool completely while you make your samosas wrappers.

    Add all the remaining ingredients and mix. Add salt and extra spices to your liking.

    At this point, the samosa dough you made has been resting for a while and it is ready to work with. To make the wrappers you will want to cut dough into 6 equal portions and roll dough from each section into a ball.

    Place a ball of dough between two sheets of baking parchment paper and roll dough with a rolling pin into a thin circle about the size of a side plate.

    Finally, use a knife to cut each rolled-out dough in half. You will end up with 12 half circles. Each half circle the wrapper for one samosa.

    Hint: Rolling dough into a circle is something that can take practice. If you are having a difficult time I recommend using a side plate and a knife to trim the dough into a circle.

    Filling and folding keto samosas

    Start by laying out one samosa wrapper with the flat cut side toward the bottom. Use your finger to brush water in a line along half of the flat cut side. This will help the wrapper stick together as you fold it.

    Next, fold the two corner edges up to form triangles or a cone. Overlap the corners with the wet edge on top of the other. Pinch the edges closed by firmly pressing the seam down to ensure it sticks and pinch the bottom of the cone closed.

    Hold the cone upright and open in your hand with the seam facing your palm. Your palm will help support the seam while you add the filling. Equally distribute the filling into each cone until it is ⅔ of the way full.

    Using your finger brush water around the inside edge of the cone. Then press the edges of the cone together and fold the bottom under to seal the cone and form a triangular samosa. Make sure the edges are closed totally so no filling leaks out!

    Place the samosa down so that it is standing up with the sealed bottom facing down. Repeat until all 12 samosas are filled. Then cook by following the instructions below.

    Substitutions

    Want to try keto samosa but need an alternative for a certain ingredient? Check out the list below for recommendations for common substitutions.

    • Cilantro - not a fan of cilantro or corriander? No problem! Replace it with freshly chopped parsley or omit it all together.
    • Cauliflower - cauliflower is used in place of potatoes to make this recipe low-carb. Turnip is another alternative for potato you can use although it is a little higher in carbs than cauliflower.
    • Fresh instead of dried - Use 2 teaspoon fresh ginger instead of ground ginger, or use 1 teaspoon dried coriander instead of fresh coriander.

    Variations

    Making keto samosas in the air fryer can be a lot of fun, and it's a great recipe to experiment with and make your own. Below are some suggestions of different flavors you can add to a keto samosa.

    • Meaty - Add some cooked minced/ground meat to your filling. You can simply add it to your filling or replace half the cauliflower with meat. You could even add shredded chicken.
    • Nutty - chopped cashews are used in many Indian dishes. Try adding a handful of chopped cashews to your filling.
    • Extra Spicy - sprinkle in some hot spices such as cayenne pepper, crushed red pepper flakes, or a bit of hot sauce to give your samosas an extra kick.

    Cooking instructions

    Now you are ready to cook the keto samosas. Brush the samosas with olive oil and cook one of 3 ways.

    1) Bake in the oven on a baking tray at 190°C/375°F for 15-18 minutes or until the samosas are golden brown.

    2) Arrange the samosas in your air fryer basket and air at 190°C/375°F for 7-8 minutes. Depending on the size of your air fryer you may need to cook the samosas in batches.

    3) Add an inch of olive oil to a skillet and fry the samosas over medium-high heat for 3-4 minutes on each side. Only cook 3-4 samosas at a time.

    How to cook samosas in the air fryer

    Using an air fryer to cook keto samosa is quick and easy.

    • Pre-heat your air fryer to 190C/375F.
    • Spray the wire basket with cooking oil.
    • Gently place each samosa into the oiled basket. Ensure there is plenty of space between them.
    • Cook for 7-8 minutes, open the drawer and turn each samosa.
    • You may need to cook for a further 2-3 minutes to ensure they are golden brown on all sides.
    • Depending on the size of your air fryer you may need to cook the samosas in batches.

    Let the samosas cool for a few minutes after cooking and enjoy.

    Equipment

    A rolling pin is a must-have for making samosas so that you can thinly roll out the roti dough. If you don't have a rolling pin a wine bottle can be used to roll out the dough.

    I used an air fryer to cook my samosas since they are traditionally deep-fried. I like that I only have to use a fraction of the oil when cooking with an air fryer (compared to deep frying) and still get a great taste.

    Alternatively, you can bake your samosas in the oven on a baking sheet or even pan-fry them on the stove as shown above.

    Storage

    Uncooked samosas are best stored in the freezer (up to 3 months) until you are ready to cook them. Be sure to store the samosas in an air-tight container or bag that is freezer safe.

    I also recommend flash freezing the samosas on a baking sheet before putting them all together in one container. This will ensure they don't stick together.

    Frozen samosas can be cooked while still frozen (it just takes a bit more time) or defrosted in the refrigerator or counter before cooking.

    Recipe FAQ

    Can I freeze samosas?

    Keto samosas can be very filling and rarely do we eat a whole batch in one sitting. I like to freeze my uncooked samosas and cook only a few at a time in my air fryer.

    How do I make crispy samosas?

    You can make crispy samosas by spraying your samosas with cooking oil before baking in the oven, air fryer, or frying pan. Sometimes if I want a crisper samosa I will leave the baking powder out of the roti dough. Really it just depends on your preference. Either way, you will soon make this one of your most popular recipes!

    Can I make the recipe spicier?

    Yes, you can adjust the heat of your samosa filling by adding more or less chili powder, chili flakes, garam masala, or even add some finely chopped green chilies.

    Can I use almond flour instead of coconut flour?

    • 1 batch keto roti dough

    Aloo Filling

    • 2 cups cauliflower steamed and chopped
    • 2 tablespoon extra virgin olive oil (ghee or coconut oil)
    • ½ teaspoon ground cumin
    • ½ teaspoon ground ginger
    • 1 tablespoon garam masala
    • 2 cloves garlic minced
    • 2 tablespoon jalapeno chopped
    • 2 stems green onions chopped
    • 1 tablespoon lemon juice
    • 2 tablespoon cilantro chopped
    • +/- salt and pepper

    Equipment

    • Measuring cups and spoons
    • Mixing bowls
    • Parchment Paper
    • Rolling Pin
    • Air Fryer

    Instructions

    Make keto roti dough

    • Start by maxing up a batch of keto roti dough. While the dough is resting you will want to make the filling.

    Make samosa filling

    • To make the filling heat the oil in a skillet. When the oil is hot add the seasoning(cumin, ginger, Garam masala), garlic, and jalapeno to the skillet. Saute in the skillet for about 1 minute then add the rest of the filling ingredients to the skillet. Let the filling cook for 3-4 minutes, stirring occassionally.
      Once the filling is done remove it from the heat and let it cool completely.
    • While the filling is cooling prepare and shape the samosas wrappers. To do this cut your roti dough into 6 equal sections. Form each section into a ball. Roll each ball into a thin circle about the size of a side plate between two sheets of parchment paper using a rolling pin.
      Then using a knife cut each circle in half. This will give you 12 samosa wrappers. Cover and set aside until filling is completely cool.

    Filling samosas

    • Start by laying out one samosa wrapper with the flat cut side toward the bottom. Use your finger to brush water in a line along half of the flat cut side. This will help the wrapper stick together as you fold it.
    • Next, fold the two corner edges up to make a cone. Overlap the corners with the wet edge on top of the other. Firmly press the seam down to ensure it sticks and pinch the bottom of the cone closed.

      This recipe is genius, thank you. I thought it looked complicated but once I realised I can just use leftover cauliflower and add the spices, then it was easy. I made them to go with your keto butter chicken and it was a superb Friday night keto curry.
