This is the famous cheesy keto bacon cheeseburger casserole that went viral last month. Why? Because all the parenting groups out there discovered it - see why!
What kid doesn't like a cheeseburger for dinner? Just don't tell them it's a healthy version!

This is the favourite recipe for my 13-year-old son. It's also his favourite recipe that he wants to cook every week on his cooking night (yes, each of my kiddos and hubby has a cooking night).

Keto Bacon Cheeseburger Casserole
What I love about cheesy keto bacon cheeseburger casserole, is that you can prepare the quick and easy cheeseburger casserole while you are waiting for your oven to heat to the required temperature.
Sprinkle with shredded cheese, then pop the casserole in the oven.
Bake for 15 minutes until the cheese is golden and crispy.

How To Layer Your Cheeseburger Casserole
1: Fry the beef with onion and garlic until thoroughly cooked and browned. Pour into your casserole dish.

2: Once the ground/minced beef layer is cooked, you sprinkle over the bacon.

3: Add some pickles/gherkins (pickled in vinegar, check for no added sugars)

4: Pour over the cheats cheese sauce, then add plenty of grated/shredded cheese to make a super cheesy crust.

How To Cook Cheeseburger Casserole FAST!
This recipe is so simple, it has to be seen to be believed.
But if you're running out of time, you can simply throw it all together and omitted the first step of browning and cooking the beef first.
Yes, that's right. I sometimes mix the raw beef, onion, garlic and cream cheese together, placed it in the casserole dish, continued with my cheats cheese sauce and the rest of the recipe.

If you do have time to cook the beef first, the bacon cheeseburger casserole only requires 15 minutes of cooking time for the sauce and cheese to bake and create a crunchy cheesy topping.
If you are using raw beef, cook for 40 minutes to ensure all the meat is thoroughly cooked through the centre of the casserole dish.

What Could You Serve With A Low-Carb Cheeseburger Casserole?
In addition to the side dishes above, I love to serve this dish with a huge side salad and homemade 1-minute mayo.
Or sometimes a medley of veggies, including mustard mashed cauliflower.

I made this tonight and it was really good. Thanks!!!

This recipe will not print, and if saved the page will not open. If that is characteristic of the site, it's practically useless.
Libby www.ditchthecarbs.com
Hey there John, I wonder if your printer settings have anything that is messing up the print function? Here is the direct link to print the recipe. However, the button from the top of any recipe page (Jump To Recipe, Print recipe) or inside the recipe card itself should take you to the printing page too. I hope this works for you.
Rod
Wow John, learn how to use a computer. Click, drag, copy, print. How hard is that? They did a great job on the recipe with US or metric measurements, and adjustable servings! Just go away.
Emily
I make this all of the time for my family. I add fresh tomatoes into the cheese sauce and fresh jalapeños in with the onions. Perfect every time!
Ismael Lopez
Are the nutrition facts per serving or for the whole recipe?
Libby www.ditchthecarbs.com
Per serving as per recipe 🙂
ALEX
Well, you have to think during prep ingredients as well while cooking.... Don'd blame people because of your stupidity Kimberly
Ann
Very delicious! I took the advice and used 2 eggs instead of 3 and drained the fat off the beef. I drizzled sugar free ketchup on it before baking and also placed under the broiler for a few minutes. This is a keeper!! Taste just like a cheeseburger!
Kimberly
I was very disappointed. To start I followed the instructions exactly and it was greasy. I wasnt sure if I should strain my meat. I assumed that since you're adding cream cheese that you leave it because no where in the instructions does it say to strain. Bad idea. I feel sick to my stomach from all the grease. Also the cheesy sauce ended up way too eggy and just overall didnt look appealing. I do not think I will be making this again.
Libby www.ditchthecarbs.com
I'm sorry to read you didn't enjoy this, it is one of the most loved and enjoyed recipes here, especially for families. As per the recipe, try not to choose super fatty ground beef, otherwise, as you have discovered, too much fat will render out.
Jill
I made this tonight. I decided to cook a whole lb. Of bacon in my free pan. Then I browned my ground beef. It was a lot of grease at that point so I drained off most of it then added the onion, garlic and eventually the cream cheese. I am not a person to use exact measurements because I'm used to cooking for a big family. I probably had 2lbs of ground beef. I used 3 eggs. Little more of the whipping cream. Anyway this was amazing.
You should definitely try it again, but drain your meat. 10 stars from my family.
Thanks for sharing!
Kara
I was overall really impressed with this! But IMO 3 eggs was too many (would use 2 next time), and 1 clove of garlic was definitely NOT enough! I will definitely make this again.
Kathy
looking for low carb meals for me that my guys will like and this was a real hit. It tastes great. They ate theirs on Hamburger buns while I stuck to eating it plain. One question though, it came out more like a fritatta especially around the edges. Did I do something wrong? I read it several times and I didn't see where the sauce should be heated and the cheese melted-just mixed cold and pored over the meat mixture.I'd appreciate your opinion on why it was like that
Libby www.ditchthecarbs.com
I'm chuffed that you and your kiddos loved this recipe, it's my 12-year old's favourite recipe when it's his night to cook dinner. I wonder if your dish too small so there was a large amount of cheat's cheese sauce on the top to create a frittata crust? The genius about the cheats cheese sauce is that no prior cooking is required. Just pour it over and voila. I'm sure it will improve the next time you give it a go. Has anyone else here had this problem? How did you solve it so we can help Kathy?
TLE
I didn't see anywhere where it said what size dish to use.
J
Delicious! I used more bacon and incorporated some pickles.
Stacey Nieuwenhoff
When I made this I thought it would taste really good with a little bit of ranch dressing. This would probably add about 1 net carb per serving I think.
Libby www.ditchthecarbs.com
Great idea!
Iwanna Shoptaugh
Great and wonderful dish
Justine
Has anyone tried this in the slow cooker with a tea towel on the lid?
Sammie
Well, I modified this a bit, but it turned out fantastic! I completely forgot to add the mustard, but I have a recipe for keto cheeseburger stromboli that includes sugar free ketchup so I added some to the "sauce " . Didn't add the pickles as I don't like them when they're cooked, and I put my bacon on top of the cheese topping instead of underneath so it would stay crispy. Had to bake it almost an hour but I think that was because of the additional moisture from my ketchup. My BF has been taking it for lunches with a side salad for the last few days and can't stop raving about this recipe so thank you so much for sharing it, I'll be making this many times in the future, it's great comfort food!!!!
Scott Haggins
I see the nutrition but it doesn’t say serving size??? Anyone know
Libby www.ditchthecarbs.com
The recipe states it serves 6.
Jane
AHHHMAZING
Libby www.ditchthecarbs.com
WOW, thank you!! My 12 yr old agrees. Hands down this is his favourite recipe.
BexG
This turned out great with some minor modifications based on what I had on hand and my picky husband not liking things that are "too eggy". He and everyone else loved it and ig.
- used 2 eggs instead of 3
- drained the ground beef before adding in the cream cheese
- used some club house garlic plus seasoning and tossed in a cubed up green pepper with the onions
- used 4 cloves of garlic (what can I say, we love our garlic)
- used bacons bits and no pickles in the bake
_ used fresh lettuce, tomatoes, chopped red onions and pickles as garnish (added another crunchy, fresh texture)
Adam
We have a new baby so my brain is kinda mush. I made this last night ’cause I figured it would be delicious (it was) and easy (which is also was). Anyway, we were eating it in a zoned out exhausted state and I said to my wife “you know what would be good? If you took a piece of this casserole and put to between 2 pieces of bread” She looked at me like I was dropped as a baby. I then realized what I had said and we both had a good laugh. Then the baby laughed.
Thanks for putting it together.
I added some liquid smoke and Worcestershire sauce to the gr beef to give it a little pep.
Libby www.ditchthecarbs.com
Haha you made me laugh too. Isn't it funny how old habits die hard. Even your baby found it funny, too cute!
Glynis
This is definitely one to try. I don’t like mustard so don’t have it in my cupboard. What could I use instead?
Libby www.ditchthecarbs.com
Maybe add some additional garlic?
Missy
I know the serving size is 6, but can anyone tell me how much that ends up being? I made a batch and some was eaten and now I can’t divide up properly.
Thanks!
Alice
Yum! This actually tastes like a cheeseburger.
Reading the comments, I think people need to realise that the 'cheese sauce' isn't trying to be bechamel.. Its replicating the mayo-melted-cheese flavours you'd get in a cheeseburger.
This made me one for dinner and one for the freezer (feeding two people). We served it with cauliflower mash.
Thanks for creating a recipe and sharing it, I appreciate how simple to follow they are!
Liileey
I made mine (for the first time) yesterday with ground turkey. Really delicious. Thank you!!!
Jim
I made some changes to make this more Keto friendly.
First I brought this up to 9 servings for my family
Replace the onion with dehydrated onion (1 Tbsp) dehd. has less carbs than fresh
Add Worcestershire sauce (1 Tbsp) for a more meaty (umami) flavor
No one uses medium eggs. Change to 4 large eggs
Change mustard to 3 tsp dry mustard to keep the cheesy flavor, but takes the mustardy flavor out
Remove pickles and have people add them to their own serving
Remember... these are based on changing the recipe to 9 servings.
This brought the carbs down to 1g per serving.
GINNY
I made this to nite with half and half. Combine cream cheese with sour cream and green onion. I did six slices of bacon. One pound of ground round. And 1 and 1/2 cups of shredded cheddar. Put sugar free ketchup on top by Heinz. delicipus!
Michele
What size pan is being used? It's definitely NOT a 9x9 because the pictures clearly show a rectangular pan.
Libby www.ditchthecarbs.com
Ahh, that was for the video, but when I make it at home, I use a 9x9 pan.
BexG
Forgot to rate it.
Rubi
I actually made for the first time and it was so delicia it wasn’t greasy or anything . My husband and I are the whole casserole! Thank you for your recipe
Anna
What size casserole dish did you use?
Serena Williams
It's super nasty lol not as good as it sounds. Very greasy.
Tom L
Honest review:. For me, this was not great. I didn't fully understand the cream and egg mixture... It kind of came out soft and custard like which didn't really go well with the ground beef in terms of texture. The cream cheese was lost and did not add much. Also, not enough cheese, and not enough bacon, which was also lost because it was buried. Don't mean to be the sour puss, but felt that the reviews here were almost entirely five star, do needed a balanced voice. I do like the concept. I may retool this. Would put the ground beef below, layer with a cream cheese/sour cream/green onion layer, maybe another ground beef layer, then melted cheese, topped with bacon. Something like that I guess, adding in some olive oil to the ground beef to make the macros keto friendly.
Xtina
Can you freeze this?
Libby www.ditchthecarbs.com
Yes! Freeze as individual portions so you have a healthy low-carb freezer ready meal for an emergency! It will stop the takeouts and save $$$. Yay.
Rita
But do you freeze it after you cook it in the oven? Or can you prepare it completely except for baking it, and then freeze it?
Libby www.ditchthecarbs.com
I freeze it after it is completely cooked and then cooled.
Linda schmidt
Can you cut this in half
Marsha
This came out great!! I think it's best to brown your meat ahead of time and try and get it in small crumbles vs bigger chunks. Personally I didn't notice any egg taste (like some of the reviews commented). I used Yancy's Fancy pepperoni cheese in the cheese mixture then used plain cheddar on top, only because I ran out. Will definitely make again and try other cheese versions than cheddar. On nights when I use plain cheddar I'm thinking of trying to incorporate a hot sauce. A burger chain here in the U.S. has a great one so I may try to copy. Or a version that has mushrooms and blue cheese. I didn't add the bacon as I'm not a big fan but on this I think it would be good. Didn't take more than the 15 minutes to cook, The serving is a little large for me unless you serve it with something light like a salad. So might try to cut into a little smaller pieces. And I'd say this would be great for picky eaters/children. They could probably even choose what toppings they wanted. I bet you could even make in individual serving dishes and everyone could create their own 'burger' Thanks for another great recipe Libby.
Libby www.ditchthecarbs.com
Great idea - individual cheeseburger casseroles in little ramekin dishes ... I love this!
Fuailelagi
This was a hit with my family! Thanks so much 🙂
Ian
What's the serving size for the macros above?
Libby www.ditchthecarbs.com
Recipe states "serves 6".
long may
What kind of grated cheese to use? and I am the only one in the house that is eating a Keto diet and want to be sure that I don’t waste what if fix
Libby www.ditchthecarbs.com
I use cheddar, Edma or Colby. But any solid cheese grated/shredded will work.
Ronald Isaacs
I made one and ate it for lunch at work for a week
Wren
I used the Mexican cheese grated. It’s Colby , Monterrey jack and cheddar. Delicious!
Tammy June Combs
I made this tonight with a side salad per your recommendation 🙂 Thanks so much! My pickiest eater ate some and said it would be good to make it again! I had to substitute onion powder for the onion - I think he doesn't like the crunch.
Libby www.ditchthecarbs.com
YAY!!! This makes me smile when a picky kids find a new recipe here 🙂 Well done Tammy.
Jenn
I used 0 carb dill relish instead of dicing pickles. Makes it even easier!
Kendra Capalbo
I apologize if someone else already asked this question but I was wondering what ratio fat the ground beef is that you used to calculate the nutritional information. Looking forward to trying this!
Libby www.ditchthecarbs.com
I tend to use 80/20 ground/minced beef in most recipes but for this one, I think I selected 85/15 so there isn't so much fat in the casserole.
Amanda & Jerry NeSmith
My husband and me just made this recipe and couldn't determine portion until after we had already divided out our meal although this meal was very flavorful . Was a bit runny but that was from the fat grease and our cheese sauce didn't thicken any oh well the casserole was delicious!
Kelly Seybold
what is the portion size?
A
Just to make it clear because the photos of stuff that you might need is confusing.pre- Shredded cheese isn’t keto because they add cornstarch to it to stop clumping
Libby www.ditchthecarbs.com
Check your brands, the one I buy doesn't have added cornstarch. The nutrition panel for the pre-shredded cheese I buy has 0.5g carbs per 100g. Ye-ha!
Daniel
Obviously drain the grease before you put it all together but this dish is seriously one of the best for Keto! The one thing I did Different that I loved Is that I took It out a couple of mins before, switched the oven to broil and did that for a couple of minutes to get a nice crispy crust on the top. So good!
Sidney
I know that keto is supposed to include extra fat, but putting it all together raw would leave it in a puddle of grease, even with very lean meat.
I'd have to cook and drain the meat first.
It does sound good that way.
Barbara
What size baking dish do you use? I was not sure if it was like a lasagna pan or 8 or 9” square.
Diane
The image of the dish above shows it as a 9 x 9.
Pamela
Meh... to each their own. I do have certain casseroles that I make with raw ground beef and they can get a tad greasy but if you go with leaner beef it's still good. IMO anyway Haha. I enjoy the flavour though. Maybe not everyone's cup of tea!
Joyce
I made this a few times and it always comes out true. It's delicious. Awesome recipe.
DeAnn
How many servings is this recipe?
Libby www.ditchthecarbs.com
Serves 6. The serving for each recipe is to be found just above the ingredient list. You can also dial up how many servings you would like to make, and the ingredients will magically recalculate for you.
samantha
how much is a serving? I see where you said you can change but how much is just one serving? maybe I am missing something lol, its been that kind of day.
Marnie
Such a great dish! Absolutely love love love this! Thank you for the great site - I tell everyone I know about it!!!
Libby www.ditchthecarbs.com
Wow Marnie, what a sweetheart 🙂
Sharon
Made this for the first time tonight, excellent! I read the comments before I started so I knew to beat the eggs well and drain the beef. Thank you to everyone who commented! I didn't use pickles, instead I put a few dots of sweet relish on top of the beef/bacon layer then spread them out a bit. Not so keto friendly but there isn't much in a portion and it's much quicker than dealing with pickles. Hubby asked me what I thought of it as he went for seconds. I quite enjoyed this and he did too! I had much more beef than called for, I used all 3 eggs and beat them well before the whipping cream and yellow mustard went in.There was no eggy taste. I will definitely make this again!
Rebecca
So the comments about it turning into an omlette scare me. I dont want to notice the egg at all. Also, what about mayo in place of the cream or half cream half mayo? Won’t need egg if you just use mayo am I right? Anyone do this?
Auntie Mel
I made this last night. I used two eggs, and a half cup of half and half, and one pound of beef. The egg was not noticeable, and it was delicious.
Dana
Make sure you mix it well. The forst time i did it i beat the egg before adding the rest of the ingredients. Came out like a cheese sauce. 2nd time it was a bit eggie and i realized i half mixed. Now i know!
Jamie Mullendore
Oh my goodness!!! I just made this for the family and we are IN LOVE!!! So easy, so yummy. We really likes it with a drizzle of sugar free ketchup. Thank you so much!
Kevin H.
I'm not sure what I did wrong. I'll eat almost anything, but I thought this was awful. I love pickles but I really regret putting them in there, the top tasted more like egg than cheese. I've ate it a couple days now because i hate wasting food, but I think the main killer for me is the topping, it just does not taste good.
Regardless, thank you for the recipe, as I try more things on my Keto journey.
Nadine - Texas, USA
I've made this a few times. My husband and I are keto, but, just like other reviewers, it's a whole family favorite! Our kids love it and even ask for it. It tastes exactly like a cheeseburger. Thanks for a great recipe.
Cat Stuart
Just made a double batch for our weekly meals and they are NOT going to last! This is awesome!
Libby www.ditchthecarbs.com
This is praise indeed! Thank you.
Valerie
I double the recipe but I dont know if its me or what but every time i make this, it takes about an hour to fully cook, do you have that same issue when you double the recipe?
Libby www.ditchthecarbs.com
Are you using a casserole dish that is too small so the casserole is too thick/tall? The beef is already cooked before you add it to the casserole dish so all you are cooking is the cheese sauce and to ensure the flavour is infused throughout the keto cheeseburger casserole. It should take no longer than 25 minutes. Let's see if we can figure out what is going wrong here.
Natalie
I made these with pickled jalapeños and it turned out amazing! Definitely going to be part of my meal prep option.
Kyle
I know it seems obvious to long time cooks, but if you need to drain beef after cooking, you need to put it in the recipe.Never take for granted what people may or may not know about cooking when writing out a recipe.
Jules L
my daughter has been doing keto for some time now. She had a procedure done yesterday and I wanted to fix dinner for her so I made this and I gave some to my dad and to my son and to my granddaughter who do not do keto and we all loved it!! I'm making it for my daughter again this week?
Rachel
If freezing this would you bake it first and then freeze or just cook the meat and put everything in the pan and freeze that way? I’ve made this multiple times but I’m stocking my freezer now with a new baby coming 😉
Libby www.ditchthecarbs.com
I would bake it first then freeze. Slice into individual portions too, for an easy quick meal. All the best for your new arrival 🙂 xxx
Jill
Just put this in oven to bake but noticed when I put the cheat sauce on top it just sunk into beef mix I couldn't spread it like the video? Anyone else done this? Did I do something wrong? Thanks
Theresa Starr
I don't have any gherkins on hand... do you think pickle relish would taste the same?
Auntie Mel
do the pickles however you liked. I used sliced bread and butter pickles
Linn-Mare
I want to make this now and I've run out of mustard 🙁 will that make a huge difference if I don't add it?
Libby www.ditchthecarbs.com
You can probably omit it without a hugely detrimental effect.
Emma
Just made this for my non keto cheeseburger loving partner and he loved it!! 10/10, so delish. Thank you for this recipe 🙂
Vicki
I made this today and I cooked off about 1/2 lb of riced cauliflower and right before I added the cream cheese to the pan, I added the cauliflower in and mixed all the beef ingredients together with it and the cream cheese. This gave a nice added veggie for those who want a "one pot" meal!
Nikki
Oh awesome, thanks for a great idea!!
Mandi
That's what I thought about doing, glad to know it worked!
Jennifer Travis
Oh and btw, our favorite toppers are classic burger toppings ie; tomato, extra pickles, shredded lettuce, mustard, yet also so awesome with salsa and sour cream!
Jennifer Travis
OMG! I have a household of 9. 3 of us are Keto. EVERYONE in the house asks for this recipe on the regular! I add a little heavy cream into the ground beef with the cream cheese and make the recipe for 16 servings (have dad, hubby and 18 yo son in the house.) I like to carmalize the onion and garlic in bacon grease as well. This recipe is an easy "go to" that pleases anyone in the house as well as a great idea when we have extra company. This is probably our favorite keto recipe to date!
Libby www.ditchthecarbs.com
WOW - this is the best recipe review for this recipe - ever!!!
Jennifer Travis
Thanks lol! We are greatful for the recipe! It is absolutely amazing!
Tess Kimble
As I got very excited on this recipe, I soon realized that this is only 1.6 lbs of beef and it serves 6 people? is this correct or is my calculations off?
Libby www.ditchthecarbs.com
Yes, that is correct. Serve with plenty of non-starchy vegetables, leafy greens or a side salad. If you are from the US you may be used to larger serving sizes that are the norm. Once you live low-carb or keto for a while, your appetite will drop back and the healthy fats keep you sustained for longer.
gen
Tried this and it tasted great. I think the mustard in the cheats cheese sauce gives the dish that cheeseburger punch. Has anyone else tried cooking it without the first step as Libby described?
Kara
Fantastic! I love it. I would add extra bacon next time, and jalapeños instead of pickles (or maybe a little of both). I also love the idea of adding mushrooms!
Jennifer Travis
Jalapenos are SO good with this! But what are jalapenos NOT good with?! Lol ?
Barbara McLennan
Cream cheese is listed in the ingredients for the beef layer, but not in the directions. What do you do with it?
Barbara McLennan
Sorry, I found it after I reread the recipe 🙂
Libby www.ditchthecarbs.com
In the beef layer instructions, it reads "stir through the cream cheese". Simply stir it through to make the beef a little creamy and lush!
Esteban
How big is the baking dish you used? I'm going to purchase one but I'd like to know the dimensions or does it not matter which size I use?
Gina L Ferguson
This is so good! Curious on the nutrition label, is this for the whole recipe or 1 serving? Thanks!
Libby www.ditchthecarbs.com
All my nutrition labels are per serving. The recipe will tell you how many serves it makes, and you can dial a recipe up or down to adjust how many people to feed, the ingredients are magically calculated - yay 🙂
Mark Instone
Made this using Quorn mince and soya bacon and it was delicious! I’ve eaten it for 3 days in a row!
Justine Lindsay
What would be the cooking difference if I made it into smaller dishes? I don't like making them in the big things and I'd rather make them in single or double portions. Thanks so much!
Kathryn
This was amazing. Loved every bite and my have gone back for seconds. So many different flavors and tastes just like a cheeseburger ??
Will certainly use this recipe again
Heath
Hi! Making this *right now* due to being crunched for time and options in the house. The recipe is fairly simple, and I'm sure it would taste wonderful.
However... I didn't find the actual recipie until after I'd read through what I thought were simple step by step picture instructions. Looking for what temperature to bake this at proved my folly. I've forgone the Sour Cream and the Cheats Sauce, the the ruins and added Wortcheshire sauce as another user suggested. Fingers crossed for a good meal!
Danielle
Beef doesn’t fully agree with my stomach. Will ground turkey work?
Libby www.ditchthecarbs.com
Sure thing! Yum.
Angela Reiter
I am not a great cook but this came out awesome. Loving your site. Thank you.
Diane Conner
I see the serving size is 6 but the pan in the pic looks like a 9x13 is that a correct assumptioon or is it the smaller 9X9? Plan to make tonight! Looks yummy and so easy!
Nicole
I would use a 9x9 for the way it is written. I double it and put it in a 9.5x11.
BostonApril
OMG! This was so good, and so easy! My husband raved about it, and my 13 and 15 year old son and daughter loved it too! I'll definitely make it again! I had no clue what I was going to make for dinner--but it had to be fast as I was heading out with a friend to see some live music in the city... so I just googled "Keto ground beef" and found your recipe. Instead of pickles, I put pickled jalapeños on top (my son had once again eaten all of our pickles). I didn't find that it needed any condiments - we have reduced sugar ketchup on hand, but hubby didn't feel it was needed. I cut the casserole into 6 servings, and it's a good thing there are only 4 of us eating as my son and husband had seconds. I found my single portion very filling. The recipe far exceeded my expectations! Will definitely make this again!
Libby www.ditchthecarbs.com
This makes me so happy 🙂
Deborah
I made this for the first time tonight. I left out the cream cheese because my husband doesn't like it and it came out great. Will be making this again. Just getting started on Keto so am collecting "good" recipes.
Jeff anderson
I don’t see cream cheese in recipe. Am I missing something?
Libby www.ditchthecarbs.com
It's in the "Beef Layer" part of the recipe 🙂
Carol
I made this but ditched the pickles and added worcestershire sauce to the meat! Turned out really good!!
Celeste Hummel
How much Worcestershire sauce to you add in? Just curious. I always add it to my ground beef but that was before Keto.
Nicolette Woodrum
I made this for my husband last night, who recently started Keto. He said it was great!
I am a (Raw)Vegan, but I used to make a breakfast casserole similar to it, so I made it because the ingredients seemed good. Thanks!!
Emily
This was delicious! It will be my new go to easy dinner from now on. I did make a couple of changes though. I swapped the pickles out for jalapenos, doubled the bacon, and added a dollop of Primal Kitchens chipotle lime mayo on top of my serving along with some hot sauce and it was perfect! It reminded me a lot of In-n-Outs animal style cheeseburger.
Sherry Hogan
I can’t figure out your carbs as being 3 when I put it in my fitness pal it came up with 13.
Libby www.ditchthecarbs.com
Rule #1 - never trust MFP. I stopped using that years ago, there are too many "user added" values which are completely inaccurate. Where are your carbs coming from? That doesn't sound right at all. I use cronometer.com - all official database values for accuracy 🙂
Brenna Sherman
What is the serving size?
Libby www.ditchthecarbs.com
Recipe states "Serves 6", so simply cut the cheeseburger casserole into 6 portions 🙂
Amy
This looks wonderful! I'm making this tonight, substituting Morningstar Farms products for the hamburger and bacon, since we are vegetarians. I have already used this cheese sauce poured over partially cooked broccoli, and then finished it off in the oven. That resulted in a delicious cross between quiche and broccoli casserole! Thank you so much!
Sami
This is so so amazing! I've been keto for over a year now and this is seriously my favorite recipe now! I left out pickles as I don't care for them but everything else was perfect. The cheese sauce is so creamy and yummy. Delish!

Woop woop - love this!
Karen
How is this without the pickles?
Nicole
My egg topping did not cook up and was flat. Is it possible the eggs should be slightly beaten before being mixed in with the other ingredients? It doesn't make any sense.
Libby www.ditchthecarbs.com
The eggs aren't supposed to be puffy, it is a cheats cheese sauce that cooks and thickens. You did it perfectly 🙂
Nicole
I figured out the issue. I initially cooked it in a 9.5 x 11 dish. This time, i used a 9x9 pan and beat the eggs before adding the other ingredients. Baked for 45m and it's perfect. Great recipe! Thanks!
Jeanne
I just made it. The topping turned into an omelet/scrambled egg "sauce". Didn't care for it. I'll try leaving the eggs out the next time.
Stephen
Hi, I followed your recipe but sadly my egg started to turn into an omelette during baking in the oven.
I was wondering where I went wrong?
Cara Johnson
I had a similar problem. The taste was good, but the top was a little odd. Next time I'm skipping the egg, mixing the cheese in with everything. I will also precook the bacon. Top the big mixture with bacon, pickles, and extra cheese. See how that goes.
Jeanne
Mine did, too.
Suzanne
Sounds delicious ~ going to make today for my grandkids and me of course.

Made this tonight and it’s fantastic! Tastes just like a cheeseburger 🙂 The only reason I can think of that some don’t set up right, is maybe they didn’t drain the fat when the beef mixture was done cooking? If I hadn’t drained it, I think it would have been soupy. Really great recipe!
Kevin
Wouldn't draining the fat make it significantly less keto? That's a lot of fat loss.
mel
Not necessarily - it would only be "less keto" if there were more carbs in it.
Michelle
I made this last night and loved it! I forgot all about the bacon until it was all assembled so I put it on top and stuck it all in the oven. It was really delicious! I will definitely be making this again!
Sara
I’m making this and it is not setting up. Is it supposed to be dry? Or just eat it soupy? I turned the oven up and put it in for more time.
Libby www.ditchthecarbs.com
It sounds like you have used ground/mince beef that was too fatty and the fat has rendered out into the casserole. I tend to avoid low fat beef as we want plenty of healthy fat to keep us fuller for longer and all the benefits that come from a high fat diet, but I also avoid the highest fat beef as too much fat comes out in the cooking process for a dish such as this one.
Jeanette
What a great idea that is
Jeanette
I meant the zip lock bags and the freezer..

How many calories per serving?
Libby www.ditchthecarbs.com
The nutrition panel shows 613 calories (luckily we don't count calories here 😉 ).

It's ok, its come back???
Jeanette Clayton
I've just made this to take to a luncheon and the cheese sauce has sunk... it'll still tate nice I know but what have I done wrong?
Jenya
I am going to try. What size of the dish would be optimal for the recipe?
Michelle
My husband loved, loved, loved this! He said this was a keeper recipe; it tastes awesome! He also says he is enjoying my keto diet. Just had my physical and my doctor is pleased with my weight loss, portion control, and eliminating processed foods, as well as sugars.
Libby www.ditchthecarbs.com
This is excellent news, on all levels. Well done 🙂

Are gherkin pickles Keto friendly?...I loved the recipe however for some reason mine came out a little runny.
Libby www.ditchthecarbs.com
Yes gherkin pickles are great for keto. Check how much fat % your ground/mince beef had. If it is too high, it will make any meal too runny.
Gloria
Hi Libby, I've made this twice now. The first time I ate the whole thing in 24 hrs by myself (NOT GOOD!) This time, I was able to eat a small amount and savor it. I didn't see how many servings the recipe makes. Thanks, and by the way, can't wait on the chilli, it's finally starting to cool off here.
Libby www.ditchthecarbs.com
Wow Gloria, you really do love this - way to to go! We just need to work on portion control now 😉 The recipe states serves 6. All that info is right at the top of each recipe. Don’t worry, many scroll past it eagerly wanting to get to the recipe itself. It is the beginning of summer there, but I will continue to make this throughout summer as my youngest absolutely loves it.
Paula
Could I omit the cream cheese?
Deborah
I did and really like it. So I don't think cream cheese is an absolute.
Jen
This recipe has become a weekly staple in our house. My mom was watching my baby while I was getting some meal prepping done and she tried this and loved it. My mom is not a foodie at all, and she couldn't stop talking about how good this was.
Libby www.ditchthecarbs.com
This is sensational! I love the fact you both loved it, and your mum's amazing review because she couldn't stop talking about it. I'll take that as my favourite review for today 🙂
Dena
It says serve with the one minute mayo......not sure where the mayo goes...on the salad or on the casserole....
Libby www.ditchthecarbs.com
"Serve with salad and 1 minute mayonnaise" - pour 1 minute mayonnaise over the salad. Yummy.
Marlene
What kind of grated cheese to use?
Libby www.ditchthecarbs.com
Whichever is your favourite. I tend to go for cheddar, Colby or Edam in the 1kg blocks available here in NZ.
Amy
does this freeze well? I am the only one in the house that is eating a Keto diet and want to be sure that I don't waste what if fix 🙂
Libby www.ditchthecarbs.com
Yes it does. Freeze in an airtight container. You can even wrap individual portions in baking paper or zip lock bags so it's easy to grab a single meal when you need it.
Michelle
My family loved this, I replaced the gherkins with thinly sliced mushrooms as we're not keen on them and added some cayene pepper as we like a bit of spice.
Libby www.ditchthecarbs.com
Brilliant! I love it when I hear of adaptations. I like the idea of mushrooms and cayenne pepper. Yum.
Angela
I've made this 2 weeks in a row and I absolutely love it! This is fast becoming a family favourite. Thank you for the awesome recipe!???
Libby www.ditchthecarbs.com
Excellent!! I have a chilli coming up too - watch out. You won't be able to decide which one to cook next 😉
