Keto Beef Stroganoff: The Instant Pot OR Slow-Cooker

I have given you recipe instructions below for both the Instant Pot or the slow-cooker.

Simply follow the recipe as shown in the photos and video to cook Keto Beef Stroganoff In The Instant Pot. What To Serve With Keto Beef Stroganoff

Beef stroganoff is traditionally served with high-carb pasta, but rather than that stodgy filler which adds zero nutrition, why not serve with vegetables? I like to enjoy mine with zoodles or mashed cauliflower.

By giving up pasta, you cut your carbohydrate intake and double (or even triple) your veggies. Add sour cream or cream cheese to the low carb beef stroganoff before serving, and place the sour cream/cream cheese on the table for the vegetables too. Sprinkle with parsley.

Watch the quick video below, but this step-by-step recipe guide will help you make this for an easy and quick dinner tonight.

Saute/fry the ingredients for the keto beef stroganoff as shown in the Instant Pot.

Place the lid on, turn the lid to click, and ensure it is fully sealed.

Dial the Instant Pot to “High Pressure” for 30 minutes.

Once it has beeped and finished, turn the Quick Pressure Release valve to release the pressure, then open the lid.

Equipment

  • Instant Pot

Ingredients
 
 

  • 1 onion sliced and quartered
  • 2 garlic minced crushed
  • 2 slices streaky bacon diced
  • 500 g beef, stewing steak cubed
  • 1 tsp smoked paprika
  • 3 tbsp tomato paste
  • 250 g mushrooms quartered
  • 250 ml beef stock
  • sour cream to garnish

Instructions

  • Pour some oil in the Instant Pot dish, and using the saute function gently fry the onion, garlic and bacon until cooked but not browned.
  • Add the diced beef and saute until the beef is browned on all sides.
  • Add the paprika, tomato paste, mushrooms and beef broth. Stir together then pop the lid on and turn until it clicks indicating it is fully sealed.
  • Cook on High Pressure for 30 minutes. 
  • Use the quick release valve to release the pressure. 
  • Serve with zoodles or mashed cauliflower, and garnish with sour cream

  2. This recipe is so strange and poorly written. The ingredient list omits random things like where does it call for sour cream? But stroganoff always has sour cream… and what setting do you use in the end for “high pressure”? Is it pressure cook or another setting?

    1. The sour cream is used as a garnish or may be stirred through. Sour cream doesn’t take kindly to the pressure cooker so is left as the final addition. The recipe states ” Dial the Instant Pot to “High Pressure” 30 minutes. Once it has beeped and finished, turn the Quick Pressure Release valve to release the pressure, then open the lid.”.

  3. I can’t wait to try this, Libby! I was wondering though, if you thought I could add chopped/sliced cabbage to the Instant Pot while the stroganoff is cooking. I usually cook them together on the stove top, but wondered if it might work to try putting it all in the IP.

    1. Hmm, I’m not sure. It sounds like a great idea but I have never tried it so can’t 100% confidently comment. Why not try adding a cup or two of cabbage the first time you try in the Instant Pot, then if that was successful, add more the next time you cook it. Please come back and let us know how it worked.

  6. Love, love, love this recipe. This was the first thing I made in my new insta pot today. I’ve made it twice in 4 hours. Husband loves it! I only have a 3 quart because we are empty nesters now. Didn’t think he would love it that much. Needed to make it again for lunch tomorrow. This is a keeper.

    Hubby won’t eat Keto so I didn’t tell him it was. I made it with hamburger meat since I didn’t have any cubed beef. It was great. Hubby said to make it again soon. I had it over cauliflower rice and served him sticky rice

    1. Head to Farmers Dept Store or Noel Leeming, they sell the Russell Hobbs version. That’s the one I have and Farmers often have 50% off sales each Thursday (shh … don’t tell everyone 😉 ).

    Waste of ingredients. Followed exactly. Added salt and pepper. Recipe turned out bland and watery. Even mixed in a whole cup of full fat sour scream at the end before serving and and it was still super runny. Flavor wasn’t layered in any way. Basic taste. Won’t be making again.

    Surprisingly good. Not like any Stroganoff I’ve ever made. Very mild without the cream and salt I’ve made over the years. But dailing down the carbs and fat was the point, after all. I just noticed I used beef broth instead of Beef Stock which probably contributes to the mild flavor. Next time, and there will be a next time, I’ll use a heartier stock, and more garlic to kick it up a bit, We served it on vegetable rotini which added a little earthiness to to meal.
