    Is coconut flour keto?

    Yes, coconut flour is a very low-carb flour, high in fiber, and naturally gluten-free.

    Coconut flour is extremely versatile and can be used in both sweet and savoury recipes such as:

    • Coconut flour pie crust
    • Coconut flour roti
    • Coconut flour chocolate chip cookies
    • Coconut flour sheet pan pancakes
    • Coconut flour bread
    • Coconut flour shortbread

    Coconut flour nutrition per 1 cup (112g): 32 g net carbs, 24 g protein, 12 g fat, 481 calories.

    Ingredients

    My keto chocolate waffles are an adaptation of my original vanilla keto waffles. You only need a few simple ingredients and they can be made ahead of time and kept in the fridge or freezer.

    All quantities, ingredients, and instructions are in the recipe card below.

    • eggs - medium
    • coconut flour - if you cannot tolerate coconut flour you can make my almond flour pancakes instead
    • cocoa powder - unsweetened
    • granulated sweetener - add more or less to your taste
    • baking powder - do not get confused with baking soda
    • vanilla extract - vanilla essence
    • heavy cream - double cream
    • butter - melted

    Equipment

    It is best to cook waffles in a waffle maker, but you can cook the waffle batter in a frying pan or skillet too.

    Melt some butter and brush over your waffle maker, or melt butter n your frying pan or skillet. Pour ½ cup of waffle batter and spread out gently with the back of your measuring cup.

    Cook in your waffle maker unit golden brown on both sides. If you are cooking your coconut flour waffles in a frying pan, then flip over gently using a spatula once the waffle batter has begun to bubble on the surface and the waffle is semi-cooked.

    Easy Keto Chocolate Waffles (Coconut Flour)

    Keto chocolate waffles are incredibly low in net carbs, light and fluffy yet sturdy to take all your delicious waffle toppings.

    Easy keto chocolate waffles recipe can be frozen for a quick and easy healthy breakfast or for a healthy lunchbox filler. Simply freeze each keto waffle between sheets of baking parchment paper in an airtight container.

    Healthy frozen keto waffles can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to 2 months.

    To defrost, remove as many keto waffles as you need, leave them covered on the benchtop for half an hour, or toast directly in your toaster. You can also gently fry frozen keto waffles in your frying pan over medium heat for a few minutes on each side.

    Keto waffles for lunch

    Fluffy keto waffles are perfect in healthy sugar-free and gluten-free school lunch boxes.

    Cut each waffle in half then spread with nut butter, or cream cheese and sprinkle some frozen berries on top then sandwich them together for a healthy sweet treat.

    So next time, why not make a double batch and keep the leftovers for school lunchboxes?

    Vanilla keto waffles - You can easily make these chocolate keto waffles as vanilla waffles instead. Simply omit the cocoa powder. 

    Savoury keto pizza waffles - instead of sweet waffles, you can make these savoury cheese waffles for a quick snack, lunch or Friday night fake-out.

    You can serve keto waffles hot or cold, with fresh berries or frozen berries and so many delicious healthy keto and sugar-free toppings such as:

    • Sugar-free keto maple syrup
    • Sugar-free low-carb "nutella"
    • Whipped heavy cream
    • Sugar-free chia berry jam/jelly

    How do I make waffles fluffy?

    The trick to making easy fluffy keto waffles is to whisk the egg whites until firm and form stiff peaks. Do not skip this step.

    My waffles are dry, what can I do?

    The extra dry ingredient (cocoa powder) will sometimes make these waffles a little sturdier (which I personally like). If you want them a little lighter, just add a teaspoon of water (or cream) at a time.

    Cook the first waffle to see if the mixture needs diluting at all before adding any liquids.

    Can I serve fruit with keto waffles?

    Yes, you can serve fresh berries or frozen berries with keto waffles. You need to know how many carbs are in fruit so you can choose which berries to enjoy and how many fit in with your daily carb limit on your keto diet.

    Ingredients

    • 5 eggs - medium separated
    • 4 tablespoon coconut flour
    • 25 g (¼ cups) cocoa powder (unsweetened) unsweetened
    • 4 tablespoon granulated sweetener of choice or more, to your taste
    • 1 teaspoon baking powder
    • 2 teaspoon vanilla extract
    • 3 tablespoon full fat milk or cream
    • 110 g (1 stick) butter melted

    Equipment

    • Large waffle maker
    • Frying pan

    Instructions

    First bowl.

    • Whisk the egg whites until firm and form stiff peaks.

    Second bowl

    • Mix the egg yolks, coconut flour, cocoa, sweetener, and baking powder.
    • Add the melted butter slowly, mixing to ensure it is a smooth consistency.
    • Add the milk and vanilla, mix well.
    • Gently fold spoons of the whisked egg whites into the yolk mixture. Try to keep as much of the air and fluffiness as possible.
    • Place enough of the waffle mixture into the warm waffle maker to make one waffle. Cook until golden.
    • Repeat until all the mixture has been used.

        YES! Great idea. You may have to cook it for longer to make it go crispy a sturdy otherwise my chocolate chaffles you'd be perfect too. They are based on cheese so go super crispy.

        I would suggest 180C/350F for 8-12 minutes, but check as they cook. The time will vary considerably according to how shallow your waffles are.

      Hi Libby. First of all, thanks for an amazing website and your phenomenal support. I've been ditching the carbs for 2 years now, and I'm trying to ease my kids in that direction as well. So I tried to make these waffles, I used erythritol for the sweetener (because that's the only powdered sweetener I have access to) and the waffles had a bit of a bitter aftertaste.
      Any idea why that happened?
      I did find that 2 days later when I reheated the leftovers, the waffles tasted better than the fresh ones had.

        Hmm, I'm not sure whether that after taste was from. If you had a cooling effect in your mouth, it was probably the sweetener, but if there was a bitter taste, it could have been the brand of cocoa powder used. I know there is one brand here that I avoid as it is not chocolatey at all, just bitter. I hope that helps.

        There is no easy substitution for this recipe. Almond flour and coconut flour act in completely different ways. You may want to read my Ultimate Guide To Coconut Flour vs Almond Flour.

      I'm FODMAP sensitive so is this recipe ok for me? Also if I replace a couple tsps of coconut flour with psyllium to up the fiber would it still work? I haven't tried these yet but I'm eager to! I've tried making cloud bread before and mixing peaked whites into a recipe is haaaard, with cloud bread it's essential to get that right but how essential is it for this? I'm trying to reduce stress so stressful cooking is def not what I'm looking for hahaha. Thank you!

      Made these this morning. Unfortunately, got egg yolk in the whites and they wouldn't whip, so the batter turned out runny. But, they were still delish! I made a cream cheese, butter and flavored stevia topping that was an excellent accompaniment. Even my non-keto, carb loving husband liked them and that's saying something! Will def be making these again! TY for the recipe. ?

      Made these today to celebrate being on school holidays! Served with defrosted berries, whipping cream & sugar-free syrup. Kids didn't know what was happening! They loved them & so did I! Softer than our old waffles but quite yummy. Ended up making 6 waffles in your machine so we had 1 & a bit each. Miss 11 didn't finish hers & Miss 13 thought there was too much cream, Mr 9 ate all the leftovers. No one realised they were LCHF. Thank you Libby!

      This recipe says 7g total carbs per serving. But, per serving the unsweetened plain cocoa powder is 3.5 grams carbs, the coconut flour is 4g carbs and the sweetener you recommend is 8g of carbs, that's 15.5 grams of carbs per serving. Minus the 9grams of fiber and you are still at 6.5 grams of net carbs. Next time I will reduce the sweeter by half to get the net carbs down. Tasted to sweet to be true! But a great recipe! Thank you!

        Just realized me own error - new to keto... sorry. The carbs in the sweetener don't count because they are "sugar alcohol carbs".So the nutrition is true! Can't wait to eat more of these : )

      My son has never liked waffles... today, he took seconds. He preferred the low carb, grain-free awesomeness to the classic carb loaded waffles! Since I started the keto diet, this has become my all-time favorite recipe! It’s super easy and my kids will actually eat them! Thank you!

      I’m not sure if I’m doing something wrong, but it’s taken me like 20+ to get the egg whites fluffy and firm. I don’t have a utensil like you used in the video so I was using a whisk and then switched to a fork. Maybe the utensil is the problem? Any help is appreciated. I’ll make another comment once these are cooked up!

        Egg whites generally only take a few minutes to whip into firm peaks. You can pick up a cheap hand whisk at most stores, it is worth it. Alternatively buy a stick blender, which I use almost daily for mayonnaise, whipped cream, cheesecakes and egg whites etc. it is very versatile. Here are my top gadgets.

          Thank you! I eventually switched to my hand mixer and that helped get them firm much faster. Hopefully that tool is ok. They turned out good and my kids really liked them too!

      Thank you, thank you for these amazing waffles! They are a staple in my home. I make a double batch each week and have them with either bacon or breakfast sausage every morning I love them so much! Sometimes when I need a little snack I break a 1/4 of the waffle and have a quick little dessert.

      Only thing I do different is I add only 4 Tblsp of butter and 4 Tblsp of coconut oil instead of one stick of butter. Also I either use cocoa extract or caramel - AMAZING!!

        That is a rough estimation and may work. The amount of butter isn't critical to get the recipe exactly right.

      Also made these for my brother and sister and again another hit! The batter for these is slightly denser but they cook the same way. We all preferred the original version but these make a great change or a lovely dessert waffle. Definitely a brilliant recipe!

        You could even omit it if you like. I add it so they spread easily and are light and fluffy. Alternatively you could use coconut cream or heavy cream too.

        No sorry almond and coconut flour are not directly interchangeable. You might want to read The Ultimate Guide To Low Carb Flours. I do have other pancake recipes, but no where near as good as my keto waffles.

      These are delicious. They didn't crisp up for me. Wondering if that's normal. 5 eggs is a lot of protein to try to crisp up but I understand why it's there. Did mine with an over easy egg and sausage. Someone else in the fam poured some heavy cream on top. It was a hit all around.

      I did this with the original recipe when I first saw this! We love Black Forest Gateau, I made these waffles in chocolate, put a few cherries on top and whipped cream, Black Forest waffles! I always have frozen cherries and berries in my freezer, they are all great with these. Have also used them with sugar free syrup!
