2015: Beetroots and carrots are higher in carbs, but we eat them occasionally as they are just so jam packed with colour, nutrition and taste amazing. If you want to lower the carbs in this salad, mix in huge handfuls of baby spinach or any other leafy green to ‘dilute’ the carrots and beetroot.
Raw Beetroot Salad
I absolutely love beetroot. I usually have it roasted and eaten warm or cold in a salad.
In the summer I grate it into salads when I can’t stand the idea of having the oven on. Beetroots are extremely high in vitamins A B and C, beta carotene, folic acid, fibre, betaine,phytonutrients, antioxidants, potassium and it is claimed beetroots help fight cancer, lower blood pressure, support detoxification and inflammation.
