SLOW-COOKER COOKING METHOD
Cooking buffalo chicken in a slow cooker is very easy. Just dump the chicken, hot sauce, seasoning, and cream cheese into the slow cooker. Then cover and cook on LOW for 4-6 hours.
Chicken is best cooked on LOW in a slow-cooker so that it doesn't dry out. When you cook it on HIGH the chicken will cook too quickly and can become tough.
OVEN COOKING METHOD
You can also bake the chicken in the oven if you do not have a slow cooker. Simply place the ingredients in a baking pan, cover, and cook at 220 degrees C/425 degrees F for 35-45 minutes or until done.

Once the chicken is completely cooked you will want to shred the chicken and mix it together with all the sauce. I have found the easiest way to shred chicken is with an electric hand mixer.

Another alternative to easily shred the chicken is to use a blender. The chicken can be placed in a blender or food processor, then pulse the blender several times until the chicken is shredded.
Assembling Healthy Grain-Free Buffalo Chicken Lettuce Wraps
After the lettuce is shredded, let it cool for a few minutes before assembling your lettuce wraps. Then fill your leave of lettuce with a few spoonfuls of chicken.
