Ingredients

  • 8 chicken drumsticks (2 per person)
  • your choice of spice rub

Indian Spice Rub - enough to cover 8 chicken drumsticks

Italian Spice Rub - enough to cover 8 chicken drumsticks

Mexican Spice Rub - enough to cover 8 chicken drumsticks

  • 1 tsp dried coriander seeds
  • 1 tsp cumin powder
  • 1/4 tsp chili powder to taste
  • 1/2 tsp salt
  • 1 tbsp coconut oil melted

Chinese Spice Rub - enough to cover 8 chicken drumsticks

Instructions

  • Pour some extra melted coconut oil (or oil of choice) into a large baking dish.
  • Choose which spice rub you will make and place all the spices and melted coconut oil in a small cup. Mix.
  • Place the chicken drumsticks into the oiled baking dish and sprinkle/rub the spice mix all over the chicken pieces.
  • Bake at 180C/350F for 20 minutes, or until cooked thoroughly.
