  • In a small saucepan, warm together the heavy cream, instant coffee and sweetener on a low/medium heat. Do not boil.
  • Break the chocolate into pieces and add to the warm cream, stirring until the chocolate has melted. Remove the saucepan from the heat.
  •  In a small bowl, whisk the eggs. Add the eggs slowly to the warm chocolate/coffee/cream, whisking continuously.
  • Pour the mocha mix into 6 little espresso cups and place them in the fridge for at least 2 hours to set.
  • Garnish with shredded/grated chocolate.
