Mix the cream cheese, sweetener and peppermint essence together in a small bowl.
Roll into little balls using your hands or 2 spoons. Place them on a plate in the fridge to harden.
Melt the chocolate in the microwave or sit the bowl of chocolate on top of a bowl of boiling water, to melt the chocolate.
Line a baking tray with non stick baking paper.
Drop a handful of nuts into the chocolate, then using 2 spoons, pick each nut out and place on the baking tray.
Do the same with the cream cheese balls, dipping them in chocolate then placing on the baking tray.
Put the baking tray into the fridge for the chocolate to harden.
Remove as soon as they are set, and place in a gift box, lined with baking paper.
