Low(er) Carb Coconut Pancakes

Coconut pancakes are a little higher in carbs, so reserve them for the children who will devour them and lick the plate clean.

  1. Mash the bananas, and add the eggs one at a time.
  2. Mix in the coconut cream.
  3. Add all the other ingredients. Mix well with a stick blender with the blade attachment, to make a smooth batter
  4. Heat butter in a frying pan on a medium heat. Add more butter in between cooking each batch of pancakes.
  5. Fry a spoonful of pancake mixture until golden on both sides. Allow them to cook through to the centre before flipping them.

Recipe Notes

* Coconut flour - you may need more coconut flour to make these bake into firm pancakes, depending on the size of eggs you use and the humidity in the kitchen.
