Lamb and Mint Burgers

  • 500g / 1lb ground/mince lamb
  • 1/2 cup fresh mint chopped
  • 2-3 tbsp rosemary fresh or dried
  • salt/pepper to taste

Greek Salad

  • black olives
  • feta cheese
  • red onion rings
  • cucumber diced
  • tomatoes diced

Lamb and Mint Burgers

  • Place the lamb mince in a bowl and break it up with a spoon.
  • Add the mint and rosemary and mix together with your hands to get the flavours worked through.
  • Mould into burger shapes as firmly as you can. The harder you press the mince mixture into shape, the better it will stay together when cooking.
  • Heat some olive oil in a frying pan on a moderate heat, and cook until browned then turn over and cook the other side. It usually takes about 5-8 minutes on each side.

Greek Salad

  • Place all the salad ingredients together in a serving dish and gently mix. I haven't given quantities as everyone likes their Greek salad slightly differently.
  • Drizzle with olive oil.

I haven't added the nutritional value for the Greek salad as everyone will make it slightly differently and eat various quantities.
