LCHF Caesar Salad

The recipe is the LCHF caesar salad shown. You can adapt it and use any variation of salad ingredients you prefer. There is no nutrition guide because the salad varies each time you make it.

Ingredients

  • large handful of leafy greens - baby kale
  • sliced spring onions
  • 4 baby tomatoes cut half
  • cucumber cubes
  • chicken
  • blue cheese
  • parmesan
  • homemade mayonnaise
  • anchovies

Instructions

  • Layer the leafy greens and salad ingredients on the bottom of the serving dish.
  • Place the chicken and cheeses on top.
  • Pop the anchovies on to finish it off.
  • Drizzle with homemade mayonnaise.

Notes

The chicken could be leftover paprika chicken, a hot roast chicken picked up on your way home from the supermarket, or some leftover roast chicken. Anything will do. It's such a superb way to make a quick and nutritious dinner.
