Mix all the seasonings together in a small dish then set aside until ready to use.
Heat a skillet on the stove. When it is hot add your ground beef to the pan. Then add HALF of your seasoning to the meat. Use a spatula to break the meat into small pieces as the meat browns and mix the seasoning in.
When the meat is complete cooked scoop the meat out of the pan and set it aside. Leave the grease in the pan, do not discard it. Remove the pan from the heat until you are ready to use the pan to make the refried "beans".
Peel your eggplant and chop it into small cubes. The smaller the pieces the quicker the eg plant will cook.
Next, add your eggplant to the same pan you cooked your meat in with seasoned grease and the remaining seasoning. Turn your heat to high and let the eggplant cook uncovered for 10-15 minutes until it becomes soft and caramelized. You'll know your eggplant is done because the eggplant will turn translucent. Be sure to stir the eggplant occasionally to ensure it doesn't burn or stick to the pan.
When the eggplant is done cooking add it to a food processor or blender and pulse several times until the eggplant is smooth like refried beans.
Add your eggplant "beans" back to the hot skillet and allow them to cook for a few minutes to get rid of any excess moisture. When they are hot, remove them from the heat until you are ready to roll your burrito.
Assembling Your Burrito Supreme
Cook your keto tortilla on the stove so that it is warm. Once it is done place it flat on a plate.
While the tortilla is still warm layer your beans, meat, red hot sauce, sour cream, lettuce, tomatoes, and cheese in the center. You will want to use ¼ of each item in each burrito to ensure you get 4 burritos.
Next roll your burrito by first folding the short ends over the fillings. Then wrap the longer end closest to you tightly over the filling. Finally, roll the burrito until the last side is wrapped around the burrito. Enjoy!
