    Sugar-free popsicles

    Make some room in your fridge for these yummy healthy keto popsicles!

    If your family loves indulging in something cool especially on hot days, then give this recipe a go!

    When summer rolls around, it’s the perfect time to whip up some cool sugar-free desserts! So here’s a new berry popsicle recipe to add to your repertoire of icy, low-carb sweets.

    Children love making these ice pops as much as they love eating them because they are so quick and easy to make.

    Ingredients

    Popsicles (or ice blocks as we call them in NZ and AUS) can be easily made using any mold of your choice. It sure adds to the fun when eating them out in the garden, picnics, at the beach, or a sweet after-dinner snack.

    They have all the great qualities of a much-loved dessert. They’re colorful, tasty, and easy – but WITHOUT the sugars, artificial flavor, and other additives.

    This healthy summer dessert only requires 4 ingredients.

    This recipe is totally natural! No additives such as ascorbic acid, beet juice concentrate, vegetable juice concentrate (often another name for vegetable sugar syrup), citric acid, lactic acid, locust bean gum, or guar gum. And, of course, no sugar either!

    1. Frozen or fresh berries - berries are one of the lowest carb fruits out there, which is why they are perfect for these keto popsicle ice pops. Check out the carb count of berries vs other fruit here.
    2. Natural unsweetened yoghurt - you'll want the full fat plain yogurt.
    3. Coconut cream - get the full fat version. If you aren't able to find coconut cream, you can also use a can of full-fat coconut milk. Just use the solid part for these sugar free ice pops and keep the liquid bit for something else.
    4. Sweetener (of choice) - add more or less according to your preferences for sweet flavors.
    5. Berry essence or extract (optional) - if you want to make a sugar free orange berry pop, this is the best way to do it. Just grab some orange essence and add a few drops to your popsicle blend. Make sure it is sugar-free!
    6. Dark chocolate drizzle (optional) - I love a good chocolate drizzle, but this one is totally optional. To keep the carb count low use 90% dark chocolate.

    No-churn recipe

    Step 1: Simply place all your ingredients (apart from the dark chocolate) into your food processor, or use a large mixing bowl and use a stick blender with the blade attachment to blend everything together.

    Step 2: Blend until smooth then pour into popsicle molds and place in the freezer to freeze solid. Depending on the size of your popsicle molds, freeze overnight or a minimum of 5-6 hours.

    Step 3: Remove the frozen sugar-free berry popsicles from their molds and drizzle with melted dark chocolate.

    Popsicle family variations

    If you love berry frozen desserts, you can easily make these simple substitutions and additions to your popsicle ice pops.

    • Sugar-free sweet cherry juice concentrate or extract - instead of the berry essence to make a cherry pop.
    • Sugar-free orange extract - instead of the berry essence to make a sugar-free orange ice pop.
    • Sugar-free grape juice concentrate - to make sugar-free grape frozen ice pops (but without the sugar).
    • Ice pop mocktail - use your favorite combo of flavors to make sugar-free orange cherry grape ice pops.

    Equipment

    These keto popsicles are a no-churn ice cream recipe. You only need a food processor (or blender) and your favorite popsicle molds.

    You probably have everything you need in your kitchen right now!

    I use a food processor, blender, or stick blender. Simply throw all the healthy ingredients together and pour the no-churn ice cream into molds.

    Popsicle molds come in all kinds of fun shapes and sizes. Some may need a popsicle stick (stirring stick) while others come with them.

    What kind of berry works best?

    The easy answer is...whichever one you like! Blackberry and raspberries both have the lowest net carbs at just 5 net carbs per 100 grams. Strawberry and blueberry are slightly higher, but not by much.

    Personally, I like to do a blended berry with both blackberry and raspberry. I'll even add a squeeze of lime sometimes too!

    Do I need to use fresh or frozen berries?

    You can use either fresh or frozen berries in these sugar-free ice pops- whichever is on hand and more convenient.

    I do think fresh tends to be slightly sweeter and have a better taste, but that is very slight. I often make these with frozen berries just for the convenience of it!

    Can I make grape frozen ice pops?

    Most grape popsicles are made with sugar-laden ingredients such as grape juice concentrate...that's the furthest thing away from sugar-free popsicles!

    To keep this keto, I would stay away from grapes unless you want to blend them with a berry. Grapes are a higher-sugar fruit and have over 3 times the carb count than blackberry and raspberry!

    What tools do I need?

    You only need a food processor (or blender) and popsicle molds.

    Why are popsicles called popsicles?

    Popsicles were invented in 1905 accidentally by 11-year old Frank Epperson when he left frozen soda powder and a stirring stick in a cup on his kitchen bench and it froze overnight. At first, it was known as an "Epsicle". Now popsicle Popsicle is the well-known brand of frozen dessert on a stick in the USA and Canada.

    How long do popsicles take to freeze?

    It depends on how large your popsicle molds are. Generally, a popsicle will take 4-5 hours to freeze completely.

    How can I remove a popsicle from the mold without it breaking?

    Be careful with the first ice pop you remove. If the ice pop isn;t frozen solid yet, it will crumble and fall out of the mold. If it has become stuck inside the ice pop mold, dip the mold in warm water for a few seconds and carefully lift the frozen dessert out.

    What are the healthiest sugar-free popsicles?

    The best popsicles are the ones you can make at home so you know exactly what ingredients are inside. Be careful of some sweeteners and sugar alcohols that may raise your blood sugar (such as maltitol).

    Are store-bought sugar-free popsicles bad for you?

    They can be if they contain certain sweeteners, additives, colors, and preservatives. Read the nutrition label.

    Ingredients

    • 500 ml (2 cups) coconut cream full fat
    • 250 ml (1 cup) natural unsweetened yoghurt unsweetened
    • 3 tablespoon granulated sweetener, of choice or more to your taste
    • 120 g (1 cup) frozen berries
    • 1 teaspoon berry essence
    • 50 g (½ cup) 90% dark chocolate (optional) to decorate

    Equipment

    Instructions

    • Place all the ingredients apart from the dark chocolate, into the blender or food processor.
    • Blend until smooth then pour into popsicle molds and place in the freezer to freeze solid.

      We're in the middle of a heat wav here on Australia, and this recipe has been an absolute lifesaver. They are sugar-free, kid friendly, and so quick and easy to make. I'm heading out to buy more ice-block freezer molds.
