- 5 (5 ) eggs - medium separated
- 4 tbsp (4 tbsp) coconut flour
- 4 tbsp (4 tbsp) granulated sweetener of choice or more, to your taste
- 1 tsp (1 tsp) baking powder
- 110 g (1 stick) butter melted
- 2 tsp (2 tsp) vanilla
- 3 tbsp (3 tbsp) full fat milk or cream
- 25 g (¼ cups) cocoa (optional)

First bowl.
- Whisk the egg whites until firm and form fluffy peaks.
Second bowl
- Mix the egg yolks, coconut flour, sweetener, and baking powder together.
- Add the melted butter slowly, mixing to ensure it is a smooth consistency.
- Add the milk and vanilla, mix well.
- ** If you would like chocolate keto waffles, add the cocoa powder now.
- Gently fold spoons of the whisked egg whites into the first bowl. Try to keep as much of the air and fluffiness as possible.
- Place the waffle mixture into the warm waffle maker and cook until golden. Note: If you have a regular waffle maker, this recipe will make 5 waffles. If you have a large waffle maker, you may only get 3 large waffles. Adjust the nutrition panel according to how many you made.

I use a 15ml tablespoon, but to be honest, in most recipes accuracy of a tablespoon is not critical - yay!

Thank you for this. 3 weeks low carb and my kids suspect that I'm trying to kill them..hahaha. I do have one child allergic to coconut. How would this do with almond flour? I'm pretty sure my kids had exactly the same thoughts when we transitioned to low-carb, luckily they survived too. As for this recipe, unfortunately, you cannot swap coconut flour directly for almond flour. They behave in completely different ways. You may wish to read this page - coconut flour vs almond flour.
